1 box of macaroni elbows
2 cans tomato soup
1 onion
1/4 stick of butter
1/4 cup parmesan/romano shaker cheese
salt & pepper

Prepare macaroni according to box. In the mean time dice onion and sautee in butter in a large sauce pan on med to low heat until onions are tender. Add tomato soup and shaker cheese salt & pepper to taste. Add drained macaroni to sauce and toss. Serve immediately

Avocado & Chick Pea Salad

1 Avocado
1 tomato
1 cucumber (optional)
1/3-1/2 can chick peas
1 tsp of minced garlic (from the jar)
1 tsp olive oil
1 tsp lemon juice (optional)
salt & pepper

Cut avocado into small pieces, chop tomato and cucumber into small pieces. Mix together veggies & chick peas, olive oil, lemon juice, garlic, and add salt and pepper to taste. 2-4 servings

Chocolate Mousse

175g plain chocolate
200g low fat soft cheese
600ml double cream
chocolate curls to decorate

Melt the chocolate in double boiler until its smooths and cool it. Place the soft cheese in a bowl add 6tbsp of cream and beat it until it smooth. Gradually beat in the melted chocolate and then remaining cream. Divide the mixture between 6 dessert glasses.

Whisk the remaing cream and place on top of each glass. Chill for 15 mins. Serve decorated with chocolate curls.

Banana Cake

2 cups flour
1 cup butter
1 cup buttermilk
2 cups peeled mashed bananas
1 cup sugar
3 eggs
3 tsp baking powder
1/2 tsp salt
Combine salt, baking powder, flour, and sugar. Add buttermilk. Beat eggs and add to flour-buttermilk mixture with mashed bananas.

Bake in greased and floured 13 X 9 pan at 350 degrees for 50 minutes. Remove and let cool. Add dolop of cool whip. YUMMMEEE!

Vegetable Beef Soup

Day One: Bake a roast with just a bit of water and one large onion sliced. (Choose a roast from the market with marbled fat, but not too much. If confused, buy the roast that costs the most per pound, that's usually the best one) As you are baking this, keep tin foil on top and slowing bake at 325 degrees. Once cooked, enjoy some and put the rest in the refrigerator. Keep the broth and store separately.

Day Two: Place leftover roast in a big pot. (Shred with fingers so the pieces are bite size) Scrape any fat off the top of the broth you saved yesterday and add this to the pot with enough water to fill your pot half full. Add one beef bouillon for each cup of water you added.

I like potatoes in my soup, this is when you add potatoes, peeled or not, cut in bite size. Boil this mixture until potatoes are just getting soft. Add several stalks celery, bite size. Make sure you use the green leaves - adds great flavor. Add carrots if you like at this point. Your water should not be at a boil point now, just simmering. Once these vegetables are soft then you add all your leftover vegetables. (If you don't have leftovers, use frozen or canned)

Now, add one large can of V-8 juice. This should take your stock to the top of your pot. If not, add a bit more water, using one beef bouillon for each cup of water added. Sprinkle a little fresh rosemary.

This soup is very good but much better the second day. It's a great way to use leftovers as anything goes. Beans are great in this soup. We always had this soup at the end of a week, when leftovers were accumulated.

Respect your spouse as dearly as you would a friend

Share both your weaknesses and your strengths with your spouse

Learn how to compromise

Don't ask, "Where's my socks?" You should be able to find them yourself

Forget the old fashion thinking of 'women's work and men's work. Each should do the chores

Look your spouse in the eye, every day, and tell your spouse that you are in love

Always call if you're running late

Allow each person to grow, but share and support that growth

The household money is just that, it's not his, not hers.

Be tender with one another

Never let anyone outside of your home to interfer

Never allow anyone to ever disrespect your spouse - nip it in the bud

Dance together - even if it's just in the kitchen

Hold hands

Learn to disagree, while respecting the right of the other to have individual opinions

Develop short term and long term memory loss - don't carry around a chalk board for amunition in an argument

Make time to date

If you are upset with your spouse, tell your spouse, not the rest of the world

And finally, be thankful every day that you were fortunate enough to marry a person that was willing to love you

Quick Brownie Delight

Go to a very good bakery. Buy the best brownies they have, choose ones without icing. Buy some chocolate fudge and some fresh strawberries and one fresh kiwi. Pour the fudge on the brownie. Clean and slice the fruit and sprinkle on top. Top it off with whip cream. Share it with a friend.

Raising Kids

Raise your girls and boys the same. Each ought to know how to clean, cook, iron and change the oil in the car.

Raise your kids to be independent and interdependent

Always remember that you are teaching an 'adult in training'.

Encourage your girls to become well established women before they choose a mate. She ought to marry someone because she wants to, not because she has to.

Encourage your boys the same way. When they marry, they ought to marry a friend, not a mother

Love your children enough to say no.

Trust them to do the right thing, eventually they will.

Once they are married, learn to love their mates.

Don't fix everything for your kids. You'll cripple them if you do. They must learn to address their own short-comings.

Let your children explore possibilities. They ought to have the right to be who they were meant to be, not what you and your family have decided they must be.

Potato Soup

Peel (or not your choice) some potatoes and dice up. Dice up a couple of stalks of celery (be sure to use the leaves) Boil some water, use one cube of chicken bouillon for each cup of water. Throw the potatoes and celery in, turn the heat down to simmer. Sprinkle a little pinch of fresh (dried if you have to) rosemary.

Don't boil because the potatoes will fall apart. Cook till potatoes are soft, remove from heat.

Mix a little bit of soft butter with some cornstarch to make a paste. Mix that with some milk. Add that mixture to the soup. Stir easy, you don't want the potatoes to crumble up on you. Season with some pepper, but you won't need salt, there's plenty in the bouillon.

Sweet Potato Casserole

3 cups of mashed sweet potatoes, 1 cup of sugar, 1/2 cup of butter (margarine) melted, 2 eggs, 1 tsp. of vanilla flavoring, 1/3 cup of milk. Mix and put in casserole dish.

Top:

1 cup of brown sugar, 1/2 cup of flour, 1/3 cup of butter (melted), 1 cup of pecans.

Mix with hands, sprinkle over top of potatoes.

Bake in 350 degree oven for 25 minutes.

Hunan Chow Mein

Ingredients 1 med. onion chopped
2 cloves garlic
1 tablespoon peanut oil
1 tsp. soysauce
1 tsp. dry mustard
1 red bell pepper
8 waterchestnuts
1 cups mushroom sliced
4 cups white rice

Cook in a large pan over high heat: onion and garlic in oil for 3 min. Add soy sauce, mustard, bell pepper, water chestnuts, mushrooms. Continue cooking, stirring frequently until crispy, about 5 minutes. Serve with cooked rice.

Three Milk Cake

This cake recipe is a staple in every mexican party. Even the toughest of grouches cannot help but succumb to the irresistable taste of 3 milk cake. Watch as any situation is left to be forgotten when in the presence of this cake!

Pastel de Tres Leches (3 milk cake)

INGREDIENTS: 5 eggs
1 teaspoon baking powder
2 cups white sugar
1/2 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1/2 cup unsalted butter
2 cups milk
1 (14 ounce) can sweetened condensed milk
1 (12 fluid ounce) can evaporated milk
1 1/2 cups heavy whipping cream
1 teaspoon vanilla extract

DIRECTIONS:

  1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour one 9x13 inch baking pan.
  2. Sift flour and baking powder together and set aside.
  3. Cream butter or margarine and 1 cup of the sugar together until fluffy. Add eggs and 1/2 teaspoon of the vanilla extract, beat well.
  4. Add the flour mixture to the butter or margarine mixture 2 tablespoons at a time, mix until well blended. Pour batter into prepared pan.
  5. Bake at 350 degrees F (175 degrees C)for 30 minutes. Pierce cake several times with a fork.
  6. Combine the whole milk, evaporated milk, and condensed milk together. Pour over the top of the cooled cake.
  7. Whip whipping cream, 1 teaspoon vanilla, and 1 cup of the sugar together until thick. Spread over the top of cake.

Be sure and keep cake refrigerated, enjoy! Makes 24 servings.

Italian Chicken

1 package of chicken legs or thighs Bake chicken in the oven on 350 degrees for 45 minutes to 1 hour
About 20 minutes before the chicken is done open oven pull out rack and pour italian dressing on each chicken piece of chicken
Bake till chicken is done

Meatloaf

5 lbs hamburger
1 cup rice
3 Tbs italian seasoning
1 pouch onion soup mix
3 Tbs brown mustard
1/2 cup mild taco sauce
4 eggs
4 Tbs soy sauce
Topping
2 cans stewed tomatoes
1 lb veleeta cheese
Mix all ingredients together put in 9x13 pan. Bake at 375 degrees for 1hr 20 min. Melt cheese and tomatoes pour over meatloaf put back in oven for 10 min... then cut and enjoy.
